Squash are among the easiest prepared because no peeling is required. Contrary to their name, they are available year-round.

Baked Acorn Squash

1 acorn squash 2 tablespoons butter or margarine, divided 2 tablespoons brown sugar, divided 2 teaspoons dark rum (optional), divided

Break off the stem. Slice squash widthwise and remove seeds and membrane. Invert on sheet and bake for 30 minutes at 350 degrees. Remove squash from oven and put in 1 tablespoon butter and brown sugar into the cavity of each half. Return to oven, and bake upright for about 15 minutes or until tender. Serves 2 in the shell.
