Dinner idea: Grilled Figs with Cheese Prosciutto




1/2 cup mascarpone cheese

12 fresh figs, cut in half and stemmed

12 slices thinly sliced prosciutto, cut in half lengthwise

Set the cheese out to soften slightly, about 30 to 45 minutes. Take a very small scoop out of the center of each fig. Fill the indent with mascarpone cheese. Wrap each fig half in a prosciutto slice. Grill, turning once, taking it off the grill if the cheese runs too much. Serve warm, not hot off the grill, so the flavors develop. Makes 6 servings.
