Catskill Animal Sanctuary, the Hudson Valley’s beloved 110-acre haven for rescued horses and farm animals, has re-launched its popular vegan culinary program “Compassionate Cuisine” with Chef Linda Soper-Kolton at the helm. Classes begin on May 24th with an ethnic cooking series, and will be taught at The Homestead, a meticulously renovated pre-Revolutionary War-era farmhouse that offers lodging and meeting space on Sanctuary grounds.
  “The classes are user-friendly and taught by a timeless and talented vegan chef in a farmhouse built before the Revolutionary War," said Gates. Carpenter Caleb Fieser used cut nails, old beams, whitewash, soft mortar, and additional “old practices” to restore the home to its former beauty.
