DANSVILLE — The Old Madrid has changed hands many times in the decades it has been at its noble spot on historic downtown.
Crystal Burns is breathing new life into the old gem once again. It will be called CB’s Bar and Grill, and get a change up.
Burns said she hopes it have it open by July 1, and plans on having a grand celebration for the new restaurant on main street.
“It has always been a dream of mine to own a restaurant,” she said. “I heard this was available and bought it. There are two apartments upstairs that will help offset the costs.”
CB’s Bar and Grill will have all the American food favorites, with family dining in front, and the sports bar out back.
“We are going to extend the outdoor bar and games,” she said. “It will look like a dug out in keeping with the sports theme.”
Burns said there will be pasta dishes, steak, wings, seafood, gluten free and vegan options.
“We will have live entertainment and some karaoke nights,” she said. “I am planning on having different family friendly events at the restaurant.”
The family restaurant portion will be open Monday through Saturday 4 to 9 p.m. for dinners. The bar will be open weeknights until midnight and weekends until 2 a.m. seven days a week.
“It is part of the historic district so we can’t change much. It has a lot of space and potential,” Burns said. “I always thought it would be cool to have a sports theme restaurant.”
On the weekends Burns hopes to have the family portion opened for birthdays, weddings, baby showers, and other events like that.
“We want to use our space the best way we can,” she said.
Burns has a full staff ready to be part of this dream with her once the inspection goes through.
“Make sure you have the savings. Things will come up you didn’t realize would before,” she said about giving people advice. “Have a great manager and chef. Be sure to have a good support system.”
